A Delicious Snack for Children: Healthy Granola Bars

chewy granola barsDouble a batch of my gourmet breakfast granola (or use a healthy, store-bought variety) and use what doesn’t get eaten for breakfast in this recipe.

I cut them into bite-size squares. So chewy and delicious!

Ingredients for Healthy Granola Bars

Makes 12 servings

  • 1 cup dried cranberries and/or raisins
  • 1 tsp. ground cinnamon
  • ½ cup nut butter (we like almond butter!)

Directions for Healthy Granola Bars

Stir together gourmet granola, cranberries and cinnamon in a large mixing bowl.

Bring brown rice syrup to a boil over medium-high heat in a small saucepan.

When bubbles start moving from the outside of the pan to the center, reduce heat.

Simmer for 5 minutes.

Remove from heat and quickly stir in nut butter.

Immediately pour over granola mixture and stir well.

Press into a buttered rectangular baking dish.

Cool completely before cutting into 1-inch squares.

Store in a glass storage containers.

  • TIP: Add a Hint of Chocolate Sweetness

Add ½ cup chocolate chips to granola mixture. I’ve discovered dairy, wheat and soy free chocolate chips sweetened with evaporated cane juice as a healthier alternative to traditional chocolate chips. It just goes without saying- adding chocolate to anything just makes it taste better!
